The Gedeb region, located in the southernmost part of Yirgacheffe, has gained attention in recent years due to its high-quality coffee. Beyond the high mountains facing the northeast lies Guji, boasting one of the highest elevations within Yirgacheffe. The significant temperature difference between morning and evening puts moderate stress on the cherries, allowing for slower maturation compared to other regions. This results in a region known for its well-defined sweetness. The carefully processed beans are stirred and dried meticulously on African beds, under Ethiopia's intense sunlight, for approximately 3 weeks.
